candied sweet potatoes my way
I live in sweet potato country, many farmers grow them in my county. There are so many ways you can cook sweet potatoes and they are delicious and good for you. Here is a Sweet Potato Casserole my way. Enjoy

Ingredients
- 6 large bright orange sweet potatoes
- 1 pound dark brown sugar
- 1 stick butter, room temperature
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 cups minature marshmallows
- 1/2 cup white sugar
- 2 teaspoons salt

How To Make candied sweet potatoes my way

Step 1STEP ONE: Wash and peel potatoes, chunk cut potatoes into two inch disk.

Step 2STEP 2: Place potato disk into a large sauce pan and cove them with water. Add the 2 tsp salt and 1/2 cup of white sugar. Cover and boil over medium heat until fork tender, about 30 minutes. DRAIN POTATOES.

Step 3PREHEAT OVEN @ 350 degreees F. Spray a 13x9x2 oven baking pan with pam.

Step 4Place fork tender potatoes into baking pan. Add Vanilla and Cinnamon to Brown Sugar and stir well. Sprinkle brown sugar mixture over potatoes, place a slices of butter over brown sugar. Cover with foil and bake 25 minutes. Remove from oven and remove foil.

Step 5Sprinkle evenly with marshmallows and continue baking until marshmallows are toasty brown.
