In a large mixing bowl, mix all ingredients until well blended, either by hand or with a mixer set on medium low
Drop by 2 Tbl onto cookie sheet, 2 inches apart
Bake 8-10 minutes until puffed and toothpick inserted comes out clean. Cool completely on rack.
In a mixing bowl, add filling ingredients and beat until smooth.
put 1 1/2 Tbls of filling in the center of the bottom half of the pie and cover with the top, pressing gently so filling spreads. Keep chilled until ready to serve.
