buttery pecan bars

If you like pecan pie, you will think you have died and gone to heaven when you try these! My hubby doesn't care if I ever make pecan pie again. He prefers pecan bars now. When my son-in-law comes to visit he always requests these. Don't ruin them by using margarine! BUTTER!

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup sugar
  • 1/8 teaspoon salt
  • 1 1/2 sticks butter, room temperature
  • INGREDIENTS FOR FILLING:
  • 1 cup brown sugar, firmly packed
  • 1 cup light corn syrup
  • 1 stick butter, cold
  • 4 large eggs, lightly beaten
  • 2 1/2 cups pecans, finely chopped
  • 1 teaspoon vanilla extract

How To Make buttery pecan bars

  • Step 1
    Combine flour, sugar, salt in large bowl; cut in the 1 1/2 sticks of butter thoroughly with fork or pastry blender until very fine crumbs. Press mixture into a greased 9 X 13 cake pan. Bake at 350 for 17-20 minutes.
  • Step 2
    While crust is baking, combine brown sugar, corn syrup, 1 stick of butter in saucepan on top of stove. Bring to a boil over medium heat, stirring gently. Remove from heat. Stir 1/4 of the hot mixture into beaten eggs; add to remaining hot mixture slowly, continually stirring so as not to cook the eggs. Stir in chopped pecans and vanilla.
  • Step 3
    When crust is done baking, pour the filling over the hot crust. Put back into oven at 350 for 34-35 minutes or until set. Cool completely before cutting. Makes 16 lge. or 24 small bars.
