I've made these bars for several years.

We've always called them Butterscotch Brownies, but alot of people call them Chew Bread or Chewy Bars.

The glaze I am including is optional, but I wouldn't dare escaping the lovely taste of brown sugar and butter....YUM YUM!

  • 4 Tbsp
    butter or margarine, melted
  • 1 c
    light brown sugar
  • 1 large
  • 1 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
  • 1 tsp
    vanilla (i sometimes use rum extract)
  • 1 c
    chopped pecans

  • 1 c
    light brown sugar
  • 4 Tbsp
    butter or margarine
  • 4 Tbsp
    evaporated milk
  • 1 tsp
    vanilla (i sometimes use rum extract)

How to Make Butterscotch Brownies


  1. Preheat oven to 325 degrees; grease a 8 x 8 x 2 inch glass baking dish.
  2. In a medium mixing bowl, combine butter, sugar, egg, flour, baking powder, salt, vanilla (or rum extract) and pecans. Mix well (batter will be thick). Spread in prepared pan. Bake for 20-25 minutes.
  3. In a small saucepan, bring brown sugar, butter and milk to a boil. Stir until thickened. Add vanilla (or rum extract). Drizzle over warm bars. Cut into 16 bars when cool.
