I've made these bars for several years. We've always called them Butterscotch Brownies, but a lot of people call them Chew Bread or Chewy Bars. The glaze I am including is optional, but I wouldn't dare escape the lovely taste of brown sugar and butter...YUM YUM!

These decadent butterscotch brownies have almost a fudge-like consistency. They're chewy with a nice crunch and buttery taste. That sauce on top is delish! It has a rich caramel flavor that hardens to a nice crispy topping once the butterscotch brownies cool. Easy to make, your family is going to love them.

Ingredients

  • 4 tablespoons butter or margarine, melted
  • 1 cup light brown sugar
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract (I sometimes use rum extract)
  • 1 cup chopped pecans
  • ICING
  • 1 cup light brown sugar
  • 4 tablespoons butter or margarine
  • 4 tablespoons evaporated milk
  • 1 teaspoon vanilla extract (I sometimes use rum extract)

How To Make butterscotch brownies

  • Butter, sugar, egg, flour, baking powder, salt, vanilla, and pecans in a mixing bowl.
    Step 1
    Preheat oven to 325 degrees. Grease a 8 x 8 x 2-inch glass baking dish. In a medium mixing bowl, combine butter, sugar, egg, flour, baking powder, salt, vanilla (or rum extract), and pecans. Mix well (batter will be thick).
  • Batter poured into an 8x8 pan and baked.
    Step 2
    Spread in prepared pan. Bake for 20-25 minutes.
  • Brown sugar, butter, and evaporated milk in a saucepan.
    Step 3
    In a small saucepan, bring brown sugar, butter, and evaporated milk to a boil.
  • Stirring sauce until thickened.
    Step 4
    Stir until thickened. Add vanilla (or rum extract).
  • Sauce spread over butterscotch brownies.
    Step 5
    Drizzle over warm bars.
  • Cutting the cooled butterscotch brownies into squares.
    Step 6
    Cut into 16 bars when cool.
