blueberry/orange muffins

I have so many blueberries each year and was looking for something different. I ran across this recipe in a magazine and decided to give it a try. I used to make them and take them to the sweetest little elderly lady from our church and she loved them. She is no longer with us but I will share this recipe and dedicate them to Ms. Elvie.

Ingredients

  • 1 cup quick cooking rolled oats
  • 1 cup orange juice
  • 1 teaspoon grated orange zest
  • 1 cup vegetable oil
  • 1 teaspoon salt
  • 3 to 4 cups blueberries
  • 3 - eggs, beaten
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda

How To Make blueberry/orange muffins

  • Step 1
    this is for the topping for the muffins: 1/2 cup finely chopped nuts, 3 Tablespoons sugar, and 1/4 teaspoon cinnamon
  • Step 2
    Mix oats,orange juice, and zest; blend oil,and eggs and set aside. Stir together flour,sugar,baking powder,salt,and baking soda. Add oat mixture;mix lightly. Fold in blueberries. Spoon batter into paper lined muffin tins, filling 2/3 full. Combine topping ingredients;sprinkle over batter. Bake at 400 degrees for about 15 to 18 minutes or until lightly browned.
