Ingredients

  • 1 tablespoon butter
  • 3 medium bananas, chopped
  • 1 tablespoon brown sugar
  • 2 teaspoons lemon juice
  • 1/4 cup spiced rum
  • 3 cups heavy cream
  • 1 vanilla bean
  • 8 large egg yolks
  • 5 tablespoons white sugar
  • 6 tablespoons brown sugar

How To Make banana foster creme brulee

  • Step 1
    Preheat oven to 300 degrees. Add the butter, bananas, and brown sugar together in a small saucepan. Bring to a boil and cook, mashing the bananas with a potato masher until as smooth as possible. Add the lemon juice and the rum and boil one more minute. Remove from heat and set aside.
  • Step 2
    Pour the heavy cream into a saucepan. Scrape the vanilla bean and bring to a boil. Remove from the heat and set aside.
  • Step 3
    In a double boiler, whisk the egg yolks until thick.
  • Step 4
    Add the white sugar and whisk for about 3 minutes.
  • Step 5
    Slowly add the heavy cream, whisking until thickened.
  • Step 6
    In 6 ramekins, divide the banana mixture into the ramekins.
  • Step 7
    Divide the heavy cream into the 6 ramekins. Place the ramekins in a roasting pan big enough for them to all fit. Fill it with water halfway up the ramekins.
  • Step 8
    Bake until set, about 45 minutes to 1 hour.
  • Step 9
    Remove and let cool.
  • Step 10
    When ready to serve, sprinkle the brown sugar over the top and with a kitchen torch. Caramelize the sugar. Then serve.
