3 mdbananas, chopped

1 Tbspbrown sugar

1/4 cspiced rum

3 cheavy cream

1vanilla bean

8 lgegg yolks

6 Tbspbrown sugar
How To Make banana foster creme brulee

1Preheat oven to 300 degrees. Add the butter, bananas, and brown sugar together in a small saucepan. Bring to a boil and cook, mashing the bananas with a potato masher until as smooth as possible. Add the lemon juice and the rum and boil one more minute. Remove from heat and set aside.

2Pour the heavy cream into a saucepan. Scrape the vanilla bean and bring to a boil. Remove from the heat and set aside.

3In a double boiler, whisk the egg yolks until thick.

4Add the white sugar and whisk for about 3 minutes.

5Slowly add the heavy cream, whisking until thickened.

6In 6 ramekins, divide the banana mixture into the ramekins.

7Divide the heavy cream into the 6 ramekins. Place the ramekins in a roasting pan big enough for them to all fit. Fill it with water halfway up the ramekins.

8Bake until set, about 45 minutes to 1 hour.

9Remove and let cool.

10When ready to serve, sprinkle the brown sugar over the top and with a kitchen torch. Caramelize the sugar. Then serve.
