Ingredients
- 1 tablespoon butter
- 3 medium bananas, chopped
- 1 tablespoon brown sugar
- 2 teaspoons lemon juice
- 1/4 cup spiced rum
- 3 cups heavy cream
- 1 vanilla bean
- 8 large egg yolks
- 5 tablespoons white sugar
- 6 tablespoons brown sugar
How To Make banana foster creme brulee

Step 1Preheat oven to 300 degrees. Add the butter, bananas, and brown sugar together in a small saucepan. Bring to a boil and cook, mashing the bananas with a potato masher until as smooth as possible. Add the lemon juice and the rum and boil one more minute. Remove from heat and set aside.

Step 2Pour the heavy cream into a saucepan. Scrape the vanilla bean and bring to a boil. Remove from the heat and set aside.

Step 3In a double boiler, whisk the egg yolks until thick.

Step 4Add the white sugar and whisk for about 3 minutes.

Step 5Slowly add the heavy cream, whisking until thickened.

Step 6In 6 ramekins, divide the banana mixture into the ramekins.

Step 7Divide the heavy cream into the 6 ramekins. Place the ramekins in a roasting pan big enough for them to all fit. Fill it with water halfway up the ramekins.

Step 8Bake until set, about 45 minutes to 1 hour.

Step 9Remove and let cool.

Step 10When ready to serve, sprinkle the brown sugar over the top and with a kitchen torch. Caramelize the sugar. Then serve.
