banana crumb muffins

These are a moist tasty muffin with a cinnamon and brown sugar streusel topping. A great way to use up those ripened bananas! The grand kids love these, especially when I add some chocolate chips! I saved this recipe about five years ago from another recipe site/submitted by Lisa Kreft. My photo!

Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 - bananas, mashed **
  • 3/4 cup granulated sugar
  • 1 - egg, lightly beaten
  • 1/3 cup butter, melted or 1/3 cup oil
  • 1/3 cup brown sugar, firmly packed
  • 1 cup chocolate chips (optional)
  • - streusel topping
  • 2 tablespoons all purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
  • - **i prefer to use 2 bananas and 3/4 cup unsweetened applesauce. it makes a nice moist muffin.

How To Make banana crumb muffins

  • Step 1
    Preheat oven to 375º. Lightly grease muffin cups or line with papers.
  • Step 2
    In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, salt and (chocolate chips if using). In another bowl, mix together bananas, sugar, egg and melted butter.
  • Step 3
    Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups filling about 2/3 full.
  • Step 4
    In a small bowl, mix together the brown sugar, 2 tablespoons of flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. (using about a 1/2 tablespoon per muffin). Bake in preheated oven for 18-20 minutes (mine usually take 23 minutes) or until a toothpick inserted into center of muffin comes out clean.
