banana-blueberry muffins

Both my husband and I agree, that these are the best Banana-Blueberry Muffins we've ever had. I look forward to making them again.

Ingredients For banana-blueberry muffins

  • 3 ripe bananas
  • 1 large egg
  • 3/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 slightly heaping cup of fresh blueberries
  • 1-1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • additional granulated sugar, to sprinkle over the batter before baking in the oven.

How To Make banana-blueberry muffins

    Preheat oven to 350°F.

    Place baking cupcake liners in muffin pans.

    Place the bananas in a large bowl, and mash them thoroughly with a fork.

    In a small bowl, thoroughly whisk an egg.

    Now add the egg and sugar into the mashed bananas; mix until well blended together.

    Add the melted butter and vanilla extract; stir until blended well together.

    In another bowl, whisk the dry ingredients together.

    Gradually fold in a third of the dry ingredients. Mixing after each addition with a spoon. Repeat process two more times. Stir gently until thoroughly combined.

    Add the batter into cupcake liners; filling each 3/4's full.

    Lightly sprinkle a bit of granulated sugar over the batter.

    Place muffin tins in oven, and bake for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

    Let muffins sit in the pan for a few minutes (5 minutes at least). Then transfer the muffins to a cooling rack to cool completely.
