I was able to get a bunch of pumpkins from local pumpkin patches this year (all free!). The vendors just up and left the fields and the pumpkins to rot. So, I began researching recipes to use all my pumpkins! I found this recipe, and boy is it good. It is a pumpkin custard. It is very easy to make, and delicious to eat! I hope you all enjoy.

    butter, melted
  • 2
    eggs, medium
  • 2 c
    pumpkin puree
  • 1 c
  • 1 c
  • 1/2 c
  • 1 tsp
  • 1/4 tsp
  • 1/4 tsp
    baking soda
  • 1/4 tsp

How to Make Baked Pumpkin


  1. Preheat oven to 450°F.
  2. Place all ingredients in a large bowl and mix until thoroughly combined.
  3. Pour into a lightly greased shallow baking dish and bake 30 minutes. Serve warm or at room temperature.
