baked apple pie cheesecake, my way
I honestly don't remember where I got this recipe. But since I love apple pie, and I love cheesecake, this was a no brainer! I added the apple pie spice to the recipe.

Ingredients
- 3 granny smith apples, peeled and sliced (about 1 lb)
- 1 1/4 cups sugar, divided
- 1 1/2 teaspoons cinnamon, divided
- 1 1/4 cups graham cracker crumbs
- 1/4 cup quaker oats
- 2 tablespoons melted butter
- 32 ounces cream cheese, softened (four 8 oz pks)
- 1 teaspoon vanilla
- 4 eggs
- 2 teaspoons apple pie spice, heaping
How To Make baked apple pie cheesecake, my way

Step 1Cook apples, 1/4 c sugar and 1/2 t cinnamon in saucepan until apples are tender, stirring frequently, about 6 min. Cool.

Step 2Oven to 325 degrees. Combine oats, graham crumbs, remaining cinnamon, 2 T sugar, and butter. Press into bottom of 9" springform pan.

Step 3Beat cream cheese, vanilla and remaining sugar and apple pie spice, and mix until well blended. Add eggs 1 at a time. Mix after each until well blended.

Step 4Spread 1/2 apples on bottom to 1/2 inch of edges. Cover with cream cheese mixture. Refrigerate remaining apples until ready to use. Bake cheesecake 1 hour 10 min, until center almost set. Run knife around outside of pan to loosen. Remove rim. Refrigerate 4 hours once cooled. Do not refrigerate while cheesecake is hot.

Step 5Just before serving, top with remaining apples.
