This is a delicious Israeli-inspired babka. You can switch the chocolate chips out for Shahar chocolate.

Ingredients

  • DOUGH
  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 7 grams instant yeast
  • 1/2 teaspoon salt
  • 1/2 cup warm milk
  • 1 large egg
  • 4 tablespoons softened unsalted butter
  • 4 ounces melted chocolate chips
  • FILLING
  • 4 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 2 tablespoons cocoa powder
  • pinch salt

How To Make babka

  • Step 1
    In a bowl, whisk flour, sugar, yeast, and salt. Add warm milk and egg. Mix until a shaggy dough forms. Add softened butter and knead 8–10 minutes until smooth. Cover and rise 1 – 1.5 hours until puffy.
  • Step 2
    Melt butter and chocolate together. Stir in sugar, cocoa, and salt. The mixture will be grainy because of the granulated sugar. Cool until spreadable.
  • Step 3
    Roll the dough into a 10×14-inch rectangle. Spread filling evenly. Roll into a tight log. Slice lengthwise. Twist the two strands together. Place in a loaf pan.
  • Step 4
    Second rise. Cover with plastic wrap. Rise 45 minutes until puffy (not doubled).
  • Step 5
    Preheat the oven fully to 400 degrees F. Bake 12 minutes, then check the top. If browning fast, tent with foil. Continue baking 20–25 minutes total.
  • Step 6
    Cool 20–30 minutes before slicing so the chocolate sets.
