A buttery crumb-topped bar with a sweet jam filling. You can use any flavor of jam you prefer, even homemade! Perfect with a cup of coffee or tea.

Ingredients

  • DOUGH
  • 1 cup butter
  • 1/2 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/4 cups all-purpose flour
  • CRUMB TOPPING
  • 2 tablespoons granulated sugar
  • 1/4 cup all-purpose flour
  • FILLING
  • 3/4 cup jam, any flavor

How To Make aunt theresa’s crumb bars

  • Step 1
    Preheat the oven to 350 degrees F. For the dough, cream softened butter with sugar until light and fluffy.
  • Step 2
    Mix in egg yolks along with vanilla and salt.
  • Step 3
    Mix in flour until the dough comes together and you are able to form it into a ball.
  • Step 4
    Divide the dough into 4 and take 1/4 out for the topping.
  • Step 5
    To make the topping, mix the reserved 1/4 of the dough with 2 Tbsp sugar and 1/4 cup flour. Stir all together to make a crumb mixture. I use my fingers to mix and break up the dough until it turns into crumbs.
  • Step 6
    Take the remaining dough and press it into an 8x8 baking pan.
  • Step 7
    Spread jam over the crust.
  • Step 8
    Sprinkle the crumb mixture evenly over the top.
  • Step 9
    Bake for 30-40 minutes at 350 degrees F until golden. brown.
  • Step 10
    Cool to room temperature. Cut into bars and serve.
