Made this up tonight to satisfy my daughter's pregnancy craving.

2 1/2 c
all purpose flour
evaporated milk 5oz
fresh grated ginger
1 1/2 Tbsp
oil to fry
cinnamon sugar to coat
How To Make
Peel and dice apples. Grate ginger and add to apples along with juice from a lemon.
In large bowl mix eggs, milk, flour, sugar, baking powder, cinnamon, nutmeg, salt.
Once well mixed, fold in apples and mix well.
Heat oil to 350 and drop by heaping teaspoonfuls. Fry for a few minutes (til golden) and turn. Drain in colander (keeps crispy) sprinkle liberally with cinnamon sugar and toss to coat all over.
