Made this up tonight to satisfy my daughter's pregnancy craving.

Ingredients

  • 5 medium apples
  • 1 small lemon
  • 2 1/2 cups all purpose flour
  • 2 - eggs
  • 1/2 cup sugar
  • 1 can evaporated milk 5oz
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 pinch salt
  • 1 1/2 tablespoons baking powder
  • - oil to fry
  • - cinnamon sugar to coat

How To Make apple fritters

  • Step 1
    Peel and dice apples. Grate ginger and add to apples along with juice from a lemon.
  • Step 2
    In large bowl mix eggs, milk, flour, sugar, baking powder, cinnamon, nutmeg, salt. Once well mixed, fold in apples and mix well.
  • Step 3
    Heat oil to 350 and drop by heaping teaspoonfuls. Fry for a few minutes (til golden) and turn. Drain in colander (keeps crispy) sprinkle liberally with cinnamon sugar and toss to coat all over.
