apple enchiladas

I can't take credit for this one but found it on a blog called Cornfed Mama's I almost melted (which wouldn't be to difficult in 100 degree temps!!) when I saw the pic! I LOVE anything with apples and this looks soo yummy! I haven't tried it yet but I plan on doing that this weekend :) Best part is you only use 1 measuring cup so hardly any dishes to wash :)

Ingredients

  • 21 ounces can of apple pie filling
  • 6 - (8 inch) flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

How To Make apple enchiladas

  • Step 1
    Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla
  • Step 2
    Sprinkle with cinnamon, roll up, tucking in edges; place seam side down in prepared dish.
  • Step 3
    In medium saucepan over medium heat, combine butter,white sugar, brown sugar and water. Bring to a boil stiring constantly, reduce heat and simmer 3 minutes.
  • Step 4
    Pour sauce over enchiladas and let stand 45 minutes
  • Step 5
    Bake in preheated oven for 20 minutes, or until golden (she doesn't say what temp the oven should be on but I am guessing 350/400 (I will let you know once I try them)
  • Step 6
    Serve with Vanilla Ice cream !!
