I can't take credit for this one but found it on a blog called Cornfed Mama's I almost melted (which wouldn't be to difficult in 100 degree temps!!) when I saw the pic! I LOVE anything with apples and this looks soo yummy! I haven't tried it yet but I plan on doing that this weekend :)
Best part is you only use 1 measuring cup so hardly any dishes to wash :)

Ingredients

  • 21 oz
    can of apple pie filling
  • 6
    (8 inch) flour tortillas
  • 1 tsp
    ground cinnamon
  • 1/2 c
    butter
  • 1/2 c
    white sugar
  • 1/2 c
    brown sugar
  • 1/2 c
    water

How to Make Apple Enchiladas

Step-by-Step

  1. Spoon about one heaping quarter cup of pie filling evenly down the center of each tortilla
  2. Sprinkle with cinnamon, roll up, tucking in edges; place seam side down in prepared dish.
  3. In medium saucepan over medium heat, combine butter,white sugar, brown sugar and water. Bring to a boil stiring constantly, reduce heat and simmer 3 minutes.
  4. Pour sauce over enchiladas and let stand 45 minutes
  5. Bake in preheated oven for 20 minutes, or until golden (she doesn't say what temp the oven should be on but I am guessing 350/400 (I will let you know once I try them)
  6. Serve with Vanilla Ice cream !!
