amaretto (drunken) cheesecake
This recipe was a staple at my friend Kina's house, and now that I have the recipe, it has become a favorite and often requested recipe for me to bring to family dinners. It is so easy to make, and so incredibly good, you will surely make it one of your 'go to' recipes also! You can omit (yeah, right!) amaretto if you increase water to 3/4 cup and add 1/2 t almond extract.

Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 1/2 cup cold water
- 1 - 1 oz package knox unflavored gelatin
- 3 - 8 oz packages cream cheese, softened
- 1 1/4 cups sugar
- 5 ounces evaporated milk
- 1 teaspoon lemon juice
- 1/3 cup amaretto
- 1 teaspoon vanilla
- 3/4 cup whipping cream

Step 1Combine crumbs and butter and press into a 9" springform pan. Chill.

Step 2In pan, pour gelatin over cold water and let stand 1 minute before dissolving over low heat. Set aside.

Step 3Beat cream cheese and sugar fluffy. Gradually add milk and lemon and beat fluffy. Gradually add gelatin, amaretto and vanilla and beat well. Fold in cream and pour into crust. Chill at least 8 hours. Garnish with chocolate sauce and berries if desired.
