almost no sugar-no fat chocolate chunk banana bread

This is the first posting of what I call my "Almost no sugar~no fat" recipe series. They have some, so please don't flame me about it. I cook these for diabetics that have no one to cook for them and wouldn't have any sweets, if I didn't.

Ingredients

  • 2 cups all purpose flour
  • 1 cup splenda granulated + 1tbs splenda brown blend
  • 2 teaspoons baking powder (fresh! not month's old in your cupboard)
  • 1/4 teaspoon salt
  • 2 - egg whites
  • 1 1/2 cups mashed ripe bananas (about 3 medium size)
  • 1/3 cup oil or substitute unsweetened apple sauce
  • 1/4 cup low fat milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 6 ounces sugar-free semi sweet chocolate morsels (available at amazon.com)
  • 1/2 cup chopped walnuts or pecans (optional)

How To Make almost no sugar-no fat chocolate chunk banana bread

  • Step 1
    PREHEAT oven to 350°F. Mix flour, sugar, baking powder and salt in large bowl; set aside. Stir egg whites, bananas, oil and milk in large bowl until well blended. Add dry ingredients; stir just until moistened. Stir in sugar-free chocolate and walnuts.
  • Step 2
    POUR into greased 9x5-inch loaf pan. Metal!
  • Step 3
    BAKE 55min (Maybe a little more, foil top if browning too rapidly) or until toothpick inserted in center comes out clean. Cool 10 minutes. Remove from pan; cool completely on wire rack. Cut into 18 (1/2-inch-thick) slices to serve. Enjoy!

    After reading an excellent suggestion from a poster here, I will soon try using King Arthur's White Whole Wheat Flour. If/when I do, I will up-date this recipe.
