This recipe was given to me about 12 yrs ago by my supervisor in J C Pennys. I make it every week for our church potluck. If I don't bring it, people complain. Many people have requested the recipe but I think they prefer I make it. It is tricky when you cut the bars. They have to be totally cooled and cut carefully with a small knife. The edges of the pan get sticky with the carmelization so you have to practice on cutting them just right. Enjoy!

all purpose flour
1/2 c
powdered sugar
1/2 tsp
1 c
butter, softened

lemon juice (concentrate or fresh)
1/2 tsp
baking powder
1/4 c

How to Make Aileen's Lemon Bars


  • 1Melt the butter for 1 minute in the microwave,cool. Sift the flour, sugar and salt into medium bowl. Pour the butter into flour mixture; mix well. Pat the mixture evenly into a lightly greased lasagna-sized pan. Bake in 350 degree oven for 20 mins.
  • 2Mix sugar, lemon juice and eggs well. Then add baking powder and flour, mixing lightly. Pour mixture evenly over lightly browned crust. Bake 25 minutes until top is browned . If lightly browned, turn off oven and let it brown a little longer. Remove, dust with powdered sugar and cool overnight. Cut into bars.
