Ingredients

1 1/2 c
soft coconut macaroon cookie crumbs
2 Tbsp
margerine,melted
2 pkg
cream cheese,softened/8 ounce each
1/2 large
sugar
1/2 tsp
lemon zest and1 tbsp. lemon fresh juice from one lemon
1/2 tsp
vanilla extract
2 large
eggs

How to Make 3 Step Lemon Cheesecake Bars

Step-by-Step

  • 1Preheat oven to 350 degrees
  • 2Press cookie crumbs and melted margerine into bottom of an 8 inch pan sprayed with cooking spray
  • 3beat the cream cheese,sugar,lemom zest,lemon juice and vanilla in a large bowl with mixer until well blended
  • 4add eggs,one at a time,mixing well,pour over crust
  • 5BAKE:20-25 minutes or until center is almost set
  • 6COOL COMPLETELY;REFRIGERATE several hours or overnight
  • 7Cut into bars.
