Ingredients
- 1 1/2 cups soft coconut macaroon cookie crumbs
- 2 tablespoons margerine,melted
- 2 packages cream cheese,softened/8 ounce each
- 1/2 large sugar
- 1/2 teaspoon lemon zest and1 tbsp. lemon fresh juice from one lemon
- 1/2 teaspoon vanilla extract
- 2 large eggs
How To Make 3 step lemon cheesecake bars

Step 1Preheat oven to 350 degrees

Step 2Press cookie crumbs and melted margerine into bottom of an 8 inch pan sprayed with cooking spray

Step 3beat the cream cheese,sugar,lemom zest,lemon juice and vanilla in a large bowl with mixer until well blended

Step 4add eggs,one at a time,mixing well,pour over crust

Step 5BAKE:20-25 minutes or until center is almost set

Step 6COOL COMPLETELY;REFRIGERATE several hours or overnight
