Ingredients

  • 1 1/2 cups soft coconut macaroon cookie crumbs
  • 2 tablespoons margerine,melted
  • 2 packages cream cheese,softened/8 ounce each
  • 1/2 large sugar
  • 1/2 teaspoon lemon zest and1 tbsp. lemon fresh juice from one lemon
  • 1/2 teaspoon vanilla extract
  • 2 large eggs

How To Make 3 step lemon cheesecake bars

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Press cookie crumbs and melted margerine into bottom of an 8 inch pan sprayed with cooking spray
  • Step 3
    beat the cream cheese,sugar,lemom zest,lemon juice and vanilla in a large bowl with mixer until well blended
  • Step 4
    add eggs,one at a time,mixing well,pour over crust
  • Step 5
    BAKE:20-25 minutes or until center is almost set
  • Step 6
    COOL COMPLETELY;REFRIGERATE several hours or overnight
  • Step 7
    Cut into bars.
