Preheat oven to 325 degrees. Line bottom of a springform pan with aluminum foil, on outside. This is to keep water from leaking into pan when put into water bath. Melt butter, add graham cracker crumbs mix until moist. Press into springform pan, set aside. In a mixing bowl add sugar and cream cheese, mix until well combined scraping sides to clean. When well mixed add eggs one at a time, mix till combined. Add in sour cream. Continue to mix until no lumps remain. Pour mixture into springform pan, tap pan on a hard surface to remove any air bubbles. Place springform pan into a slightly larger pan, add boiling water to the larger pan fill to about half way up the pan.
Bake for 1 hour 20 minutes. Remove from oven and cool completely, refrigerate to get cold then add your favorite topping.
