1 quart good vanilla ice cream
3/4 cup limoncello
2 tablespoons lemon or orange zest
1/4 cup finely chopped fresh mint
one box of ginger cookies or amaretti


1divide the ice cream among six ice cream coupes or large stemmed water goblets.
Pour 2 tablespoons Limoncello over each serving of ice cream. Sprinkle with the zest and with mint and serve with a cookie or two on the side. Makes six servings.
