Anyone can grown a patch of fragrant mint for fruit salad garnish, iced tea, mint juleps and this luscious ice cream.

Ingredients

  • - 2 cups firmly packed fresh mint leaves
  • - 1 1/2 cups sugar
  • - 1 1/2 cups water
  • - 1 cup fresh pineapple chunks
  • - 1 cup light corn syrup
  • - 1 cup unsweetened pineapple juice
  • - 2 cups milk
  • - 2 cups heavy cream
  • - 1/2 cup creme de menthe
  • - fresh mint leaves

How To Make mint ice cream

  • Step 1
    In a blender container or food processor bowl, mix mint leaves, sugar, water, pineapple chunks, corn syrup and pineapple juice. Cover and blend or process til smooth. Pour into freezing can of ice cream freezer. Stir in milk, cream, and creme de menthe. Freeze according to manufacturer's directions. To serve, scoop into bowls. Garnish with fresh mint leaves. Makes 3 1/2 quarts
