Lemon Ice Cream

This ice cream goes very nicely with pound cake or shortbread cookies.Source: Unknown

2 cups sugar
2 cups milk
2 cups half land half
2 tsp. grated lemon rind
1 cup fresh lemon juice
6 drops yellow liquid food coloring
garnish: fresh mint sprigs


1Mix first 6 ingredients. Pour into a 13 x 9 inch pan. Freeze at least 2 hours.
2Process half of mixture in a food processor til smooth. Remove from processor. Repeat with remaining mixture. Return all of mixture to pan. Freeze 4 hours or til firm. Garnish if desired. Makes 1 1/2 quarts.
