This is a recipe I came up with on my own because I love Key Lime Cheesecake. It is very light and refreshing and brings a taste of Florida right into your own kitchen.

Ingredients
- 2 cups heavy whipping cream
- 1 cup half and half
- 8 ounces softened cream cheese
- 2 - eggs
- 2 cups sugar
- 1 teaspoon vanilla
- 2/3 cup freshly squeezed key lime juice
How To Make key lime cheesecake ice cream

Step 1cream sugar and cream cheese together until smooth, add eggs and mix well.

Step 2Add vanilla, and key lime juice, mix until incorporated

Step 3Slowly add half and half, and heavy cream, scraping sides of mixing bowl. Whip until semi thick. Pour into a plastic container and refrigerate until well chilled.

Step 4Pour into ice cream freezer and freeze for 20-30 minutes. Transfer to a freezer safe container and freeze until firm (about 3 hours).
