This is a recipe I came up with on my own because I love Key Lime Cheesecake. It is very light and refreshing and brings a taste of Florida right into your own kitchen.

Ingredients

  • 2 cups heavy whipping cream
  • 1 cup half and half
  • 8 ounces softened cream cheese
  • 2 - eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2/3 cup freshly squeezed key lime juice

How To Make key lime cheesecake ice cream

  • Step 1
    cream sugar and cream cheese together until smooth, add eggs and mix well.
  • Step 2
    Add vanilla, and key lime juice, mix until incorporated
  • Step 3
    Slowly add half and half, and heavy cream, scraping sides of mixing bowl. Whip until semi thick. Pour into a plastic container and refrigerate until well chilled.
  • Step 4
    Pour into ice cream freezer and freeze for 20-30 minutes. Transfer to a freezer safe container and freeze until firm (about 3 hours).
