I make these in the summer for my grandsons. They love them because the "cookie" is not all soggy like the store-bought ones.

1 cbutter, softened

1 1/2 cgranulated sugar

2 call-purpose flour

2/3 ccocoa powder

3/4 tspbaking soda

1/2 tspsalt

favorite ice cream, softened

How To Make homemade ice cream sandwiches

1Preheat the oven to 350 degrees F. In a large bowl, mix butter and sugar.

2Add eggs and vanilla extract.

3In a separate bowl, mix flour, cocoa powder, baking soda, and salt. Blend into the wet ingredients.

4Spray a cookie sheet and drop batter by tablespoons onto the sheet. I use at least 1 oz. dipper to make a large cookie.

5Bake for 8 to 10 minutes. Don't overbake and make them too crisp. While the cookies are baking, soften your favorite ice cream.

6When the cookies are cool, add a scoop of the slightly softened ice cream to a cookie. Press another on top to form a sandwich.

7Wrap each in plastic wrap or foil. Put all in one container or freezer bag and freeze. As I go I freeze each one to ensure they don't melt before all are made.

8These are great with mint chocolate chip ice cream. Roll the edges in mini chocolate chips as well or crushed peppermint candy.
