This is a much richer vanilla ice cream than the regular. The richness comes from the use of egg yolks instead of whole eggs.

12 lgegg yolks, beaten

How To Make french vanilla ice cream

1Mix sugar, salt, milk, and egg yolks in a saucepan. Cook ad stir over medium heat until mixture comes to a boil.

2Remove from heat and place in cold water; cool.

3Stir in vanilla and cream. Chill thoroughly.

4Freeze in churn freezer according to manufacturer's instructions.

5Transfer to freezer containers; pack and freeze to ripen.
