This is a much richer vanilla ice cream than the regular. The richness comes from the use of egg yolks instead of whole eggs.

Ingredients

  • 2 cups sugar
  • 1 teaspoon salt
  • 4 cups milk
  • 12 large egg yolks, beaten
  • 4 tablespoons vanilla
  • 4 cups heavy cream

How To Make french vanilla ice cream

  • Step 1
    Mix sugar, salt, milk, and egg yolks in a saucepan. Cook ad stir over medium heat until mixture comes to a boil.
  • Step 2
    Remove from heat and place in cold water; cool.
  • Step 3
    Stir in vanilla and cream. Chill thoroughly.
  • Step 4
    Freeze in churn freezer according to manufacturer's instructions.
  • Step 5
    Transfer to freezer containers; pack and freeze to ripen.
