I love ice coffee and I love popsicles on a nice hot day , so why not have them together ...yummy

I got this off the net sometime back and can't remember which one.

8 mini popsicles


Add to Grocery List

  • 1/2 c
    strong coffee or espresso ; chilled
  • 1/2 c
  • 3 1/2 Tbsp
    light brown sugar
  • 1/2 tsp
  • 1/4 tsp
    almond or vanilla extract
  • 1 1/2 c

How to Make Coffee Popsicles


  1. Combine all the ingredients in a blender. Blend until mixture is smooth and frothy , but just slightly thick (if too thick , add milk , if too thin add ice)
  2. Fill Popsicle molds or small Dixie cups with the blended mixture.
  3. Quickly place mini popsicle sticks or normal popsicle sticks broke in half in the center of each mold or cup.
  4. Place cups in the Freezer and freeze until completely frozen , about 4 hours.
