This is an ice cream recipe from a friend's mom who was one of the best cooks I know. This recipe does not require an ice cream machine.

  • 1 c
    coarsely chopped pecans
  • 1/2 c
    white sugar
  • 3 Tbsp
  • 4 c
    half and half
  • 4 c
    whipping cream
  • 2 c
    packed brown sugar
  • 1 Tbsp

How to Make Butter Pecan Ice Cream


  1. In a heavy 8 inch skillet combine pecans, sugar, and margarine, Stir constantly for 6-8 minutes, or until sugar melts and turns a rich brown color. ( watch carefully, it will scorch)
  2. Remove from heat and spread on a buttered baking sheet or foil. Separate into clusters. Cool. Break clusters into small chunks.
  3. Next, combine the half and half,whipping cream, brown sugar,and vanilla. Pour into a freezer container. Let set in refrigerator for 1 hour. Stir in pecans and freeze entire mixture
