butter pecan ice cream

This is an ice cream recipe from a friend's mom who was one of the best cooks I know. This recipe does not require an ice cream machine.

Ingredients
- 1 cup coarsely chopped pecans
- 1/2 cup white sugar
- 3 tablespoons margarine
- 4 cups half and half
- 4 cups whipping cream
- 2 cups packed brown sugar
- 1 tablespoon vanilla
How To Make butter pecan ice cream

Step 1In a heavy 8 inch skillet combine pecans, sugar, and margarine, Stir constantly for 6-8 minutes, or until sugar melts and turns a rich brown color. ( watch carefully, it will scorch)

Step 2Remove from heat and spread on a buttered baking sheet or foil. Separate into clusters. Cool. Break clusters into small chunks.

Step 3Next, combine the half and half,whipping cream, brown sugar,and vanilla. Pour into a freezer container. Let set in refrigerator for 1 hour. Stir in pecans and freeze entire mixture
