butter pecan ice cream

This is an ice cream recipe from a friend's mom who was one of the best cooks I know. This recipe does not require an ice cream machine.

Ingredients

  • 1 cup coarsely chopped pecans
  • 1/2 cup white sugar
  • 3 tablespoons margarine
  • 4 cups half and half
  • 4 cups whipping cream
  • 2 cups packed brown sugar
  • 1 tablespoon vanilla

How To Make butter pecan ice cream

  • Step 1
    In a heavy 8 inch skillet combine pecans, sugar, and margarine, Stir constantly for 6-8 minutes, or until sugar melts and turns a rich brown color. ( watch carefully, it will scorch)
  • Step 2
    Remove from heat and spread on a buttered baking sheet or foil. Separate into clusters. Cool. Break clusters into small chunks.
  • Step 3
    Next, combine the half and half,whipping cream, brown sugar,and vanilla. Pour into a freezer container. Let set in refrigerator for 1 hour. Stir in pecans and freeze entire mixture
