I haven't made this yet but I will be making it for Saturday June 30, 2012 for an Ice Cream Social. I will let you know how well it is liked.

Ingredients

  • 2 cups light cream
  • 1 cup brown sugar, firmly packed
  • 2 tablespoons butter, cold
  • 2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted chopped pecans

How To Make butter pecan ice cream

  • Step 1
    Combine the light cream, sugar, and butter in a medium saucepan. Cook stirring constantly over low heat until bubbles form around the edges of the pan. Let the mixture cool and put it in the ice cream machine.
  • Step 2
    Stir in heavy cream and vanilla.
  • Step 3
    Freeze as directed by your machine's manufacturer.
  • Step 4
    Add pecans after ice cream begins to harden.
