butter pecan ice cream

I haven't made this yet but I will be making it for Saturday June 30, 2012 for an Ice Cream Social. I will let you know how well it is liked.

Ingredients
- 2 cups light cream
- 1 cup brown sugar, firmly packed
- 2 tablespoons butter, cold
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup toasted chopped pecans
How To Make butter pecan ice cream

Step 1Combine the light cream, sugar, and butter in a medium saucepan. Cook stirring constantly over low heat until bubbles form around the edges of the pan. Let the mixture cool and put it in the ice cream machine.

Step 2Stir in heavy cream and vanilla.

Step 3Freeze as directed by your machine's manufacturer.

Step 4Add pecans after ice cream begins to harden.
