Ingredients

  • 3/4 lb
    fresh ricotta
  • 1/4 c
    heavy cream
  • 1 tsp
    vanilla extract
  • 1 pt
    fresh strawberries, hulled and halved, or 3 ripe plums or ripe nectarines,pitted and cut into eighths,
  • ·
    or 1 pint fresh figs stemmed and halved (or a combination of the three0
  • ·
    fresh black pepper
  • 1/4 - 1/2 c
    honey
  • ·
    fresh mint springs for garnish

How to Make Whipped Ricotta With Honey and Summer Fruit

Step-by-Step

  1. Combine the ricotta,heavy cream and vanilla extract in a large bowl and whip using a whisk until light and fluffy,about 1 1/2 minutes (or place in a bowl and whip using a hand held mixer until light and fluffy)
  2. Spread the ricotta on a platter and top with the fruit, drizzle with some honey and season with a sprinkling of freshly ground pepper. Garnish with fresh mint sprigs.
