Ingredients
- butter, for greasing
- 2 cans apricot slices, drained
- 3 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup butter, softened
- 1 cup self-rising flour
- 3/4 cup sugar
- 3 large eggs
- 3 teaspoons vanilla extract
How To Make warm apricot buckle

Step 1Butter and line the base of a 8-inch square pan with parchment paper. Set aside.

Step 2In a medium bowl, toss the apricots with the cinnamon, nutmeg, and salt.

Step 3For the batter, combine thebutter, flour, sugar, eggs and vanilla. Whisk until combined. Do not over mix.

Step 4Pour and spread half of the mixture over the bottom of the prepared pan then spread the apricot mixture on the top. Pour the remaining mixture over the apricot mixture.

Step 5Preheat the oven to 350 degrees F and bake for 45 to 50 minutes or until golden brown.

Step 6Remove from the oven and let cool for 10 mins. Serve warm with whipped cream or ice cream.
