summer fruit crisp for two

Since it's just the two of us now I have to work on desserts that aren't hanging around all week calling my name :) This one was easy and makes use of yummy summer fruit that I'm sure you can change out to whatever is in season.

Ingredients

  • CRUMBLE MIXTURE FOR TOP
  • 2 tablespoons ap flour
  • 2 tablespoons rolled oats
  • 3 tablespoons brown sugar, firmly packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 tablespoons butter, cold
  • FRUIT FILLING
  • 1 large fresh ripe peach
  • 1 large fresh ripe plum
  • 1/2 cup fresh blueberries
  • 1 tablespoon ap flour
  • 1 tablespoon brown sugar, firmly packed

How To Make summer fruit crisp for two

  • Step 1
    Preheat oven to 400 degrees F. In a small bowl mix together the dry topping ingredients. Cut in the cold butter with a fork and mix until crumbly. Set aside.
  • Step 2
    Use a small casserole dish for the filling. I have a 24 oz. Corningware dish that is just the right size. Spray the dish with pan spray. Peel the peach and the plum and dice into the casserole dish. Add the blueberries, the 1 TBS flour and 1 TBS brown sugar and toss together.
  • Step 3
    Sprinkle the crumbles on top of the fruit mixture. Place the dish on a baking sheet and bake at 400 degrees F. for 30 minutes, until top is golden brown and fruit is bubbly. Cool for at least 20 minutes before serving. Serve with whipped topping or a scoop of ice cream.
