stuffed peaches

three large ripe peaches
4 tablespoons butter, divided
3/4 cup crushed amaretti cookies
one large egg, beaten
2 tablespoons amaretto, optional
2 tablespoons brown sugar, divided
1 tablespoon ground almonds


1preheat oven to 350. Rinse, halve, and pit peaches. Scoop out and reserve half of the flesh from each peach half. Place peaches hollow side facing up, in a shallow baking dish greased with 1 tablespoon butter.
2Mash reserved peach flesh. Cream 2 tablespoons butter with 1 tablespoon sugar and add to peach flesh. Mix in crush cookies, egg, and amaretto. Stuff each peach half with 1/6 of the mixture.
3Divide remaining tablespoon butter into 6 Pieces and place one piece on top of each stuffed peach. Sprinkle each half with remaining Brown sugar and ground almonds. Bake, uncovered, for 20 to 30 minutes or until peaches are softened and Brown on top. Serves six.
