strawberry rhubarb dessert

So all my life I thought I didn't like Rhubarb, but my husband likes it so I still made him some desserts with it. I would sample them but never really acquired a taste for the stuff. That is until I experimented with a few recipes and made some adjustments. This one is super easy and VERY tasty. Enjoy!

Ingredients

  • 10 sticks rhubarb
  • 1 pound strawberries, fresh
  • 1 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon orange zest
  • - juice of 1 orange
  • - balsamic vinegar
  • 1 box golden vanilla cake mix
  • 1 stick butter, melted
  • TOPPING
  • 1 pint whipping cream
  • 1 pint sour cream
  • 1 tablespoon sugar

How To Make strawberry rhubarb dessert

  • Step 1
    Clean and chop rhubarb in 1/2 inch pieces. Clean and quarter the strawberries. Add fresh orange zest, then squeeze orange and add juice to fruit. Drizzle liberally with balsamic vinegar. Stir in sugar and cornstarch. Pour into 9x13 pan, then top with dry cake mix. Pour melted butter over top of the dry cake mix. Bake at 350 for 1 hour.
  • Step 2
    For topping, whisk together 1 pint whipping cream and 1 pint sour cream, let set at room temperature for an hour or 2, stir in sugar, then refrigerate for an hour. The longer this sits the thicker it becomes. Spoon over warm dessert. Serve
