strawberry rhubarb crisp

This is my hubby's favorite dessert! It works great with fresh, frozen or a combination of fruit!

Ingredients

  • CRUST
  • 2 cups flour
  • 1 1/2 cups oats
  • 1 1/4 cups brown sugar
  • 1 cup butter, softened
  • FILLING
  • 2 cups chopped rhubarb (fresh or frozen)
  • 2 cups sliced strawberries (fresh or frozen)
  • 1 1/3 cups sugar
  • 2 1/2 tablespoons corn starch
  • 1 1/2 cups water

How To Make strawberry rhubarb crisp

  • Step 1
    Combine crust ingredients, press half of mixture into a 9x13'' greased pan.
  • Step 2
    Top crust with berries and rhubarb.
  • Step 3
    Stir together water, sugar and corn starch, heat until thickened, pour over fruit.
  • Step 4
    Sprinkle other half of crumbs on top.
  • Step 5
    Bake @ 350 for 45 mins.
