strawberry oatmeal bars

I got this recipe from The Pioneer Women. Love her! I have made this several times now as everyone loves them! I bring these to pot lucks at work as they are now requested everytime we have a pot luck. You know how when you have a pot luck, everyone picks out what they will bring ... I don't get to chose, I am told what to bring and this is one of them. You know I love it though!! :D Anyone who cooks knows, love is the one ingredeint that is in every recipe!

Ingredients

  • 1 3/4 cups sticks salted butter, cut into pieces, plus more for greasing pan
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups oats, quick cooking
  • 1 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 - 10 - 12 ounce jar strawberry or apricot preserves

How To Make strawberry oatmeal bars

  • Step 1
    Preheat oven to 350 degrees. Butter a 9x13 pan.
  • Step 2
    Mix well together the butter (do not melt the butter), flour, oats, brown sugar, baking powder and salt. Press half the mixture into the prepared pan. Spred with all of the strawberry preseve. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown. 30-40 minutes. Let cool completely and cut into squares.
  • Step 3
    **Note: Cut the butter in with the flour and dry ingredeints until it is chunky. Also you can use any fruit preserve you like! Change it up!
