This scrumptious easy Strawberry Cobbler combines fresh sun-ripened strawberries with a flaky buttery biscuit topping. It is one of our favorite spring and summer desserts and an extra special treat when served a la mode or with fresh whipped cream. I love to serve it on Sundays when the whole family gathers for dinner. Strawberries are one of my favorite berries. I mean what is not to love about them? They are absolutely perfect from their beautiful ruby red flesh to their naturally sweet aroma and taste.

Ingredients For strawberry cobbler

  • 2/3 c
    sugar
  • 2 1/2 Tbsp
    cornstarch
  • 2 Tbsp
    water
  • 2 Tbsp
    lemon juice
  • 1 Tbsp
    lemon zest
  • 4 c
    strawberries hulled and thickly sliced
  • 1 1/2 c
    all purpose flour
  • 1/3 c
    sugar
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1/2 c
    butter
  • 1/2 c
    buttermilk warmed to room temperature

How To Make strawberry cobbler

    Preheat oven to 375 degrees

    In a measuring cup or small bowl stir together the 2/3 cup sugar, cornstarch, water, lemon juice and lemon zest. Pour over the strawberries and stir to coat. Spoon strawberries into a 9×13 inch baking dish or close equivalent.

    In a large bowl whisk together the flour, 1/3 cup sugar, baking powder and salt. Using a pastry knife cut in the butter until crumbly. Stir in the buttermilk just until combined. Drop by rounded tablespoons onto the strawberries.

    Bake for 35-40 minutes or until golden brown. Cool slightly before serving.
