southern peach cobbler

In Chicago its a little harder to get good fresh peaches, but when i can i use them ,otherwise i use can peaches which works very well too.

Ingredients

  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon, ground
  • 1/8 teaspoon nutmeg, ground
  • 1 teaspoon lemon juice, fresh
  • 2 teaspoons cornstarch
  • 1 cup all purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, chiled , cut into small pieces
  • 1/4 cup water, boiling
  • 8 - fresh peaches peeled pitted cut thin wedges
  • - can peaches optional ( i use this)

How To Make southern peach cobbler

  • Step 1
    mix together 3 tablespoons sugar and 1 teaspoon ground cinnamon
  • Step 2
    preheat oven to 425 f
  • Step 3
    in a large bowel , combine peaches, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 teaspoon cinamon, 1/8 teaspoon nutmeg , 1 teaspoon lemon juice, and 2 teaspoons cornstarch. toss to coat evenly. pour into a 2 quart baking dish, bake in preheated oven for 10 minutes

    meanwhile, in a large bowel combine 1 cup flour, 1/4 cup sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt. blend in butter with your fingers until mixture is like course meal. stir in water until just combined.
  • Step 5
    remove peaches from oven and drop spoonfuls of topping over them. spinkle entire cobbler with sugar cinnamon mixture.
  • Step 6
    bake until topping is golden brown, about 30 minutes.
