southern peach cobbler

In Chicago its a little harder to get good fresh peaches, but when i can i use them ,otherwise i use can peaches which works very well too.

Ingredients
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon, ground
- 1/8 teaspoon nutmeg, ground
- 1 teaspoon lemon juice, fresh
- 2 teaspoons cornstarch
- 1 cup all purpose flour
- 1/4 cup sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chiled , cut into small pieces
- 1/4 cup water, boiling
- 8 - fresh peaches peeled pitted cut thin wedges
- - can peaches optional ( i use this)
How To Make southern peach cobbler

Step 1mix together 3 tablespoons sugar and 1 teaspoon ground cinnamon

Step 2preheat oven to 425 f

Step 3in a large bowel , combine peaches, 1/4 cup sugar, 1/4 cup brown sugar, 1/4 teaspoon cinamon, 1/8 teaspoon nutmeg , 1 teaspoon lemon juice, and 2 teaspoons cornstarch. toss to coat evenly. pour into a 2 quart baking dish, bake in preheated oven for 10 minutes

Step 4meanwhile, in a large bowel combine 1 cup flour, 1/4 cup sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, and 1/2 teaspoon salt. blend in butter with your fingers until mixture is like course meal. stir in water until just combined.

Step 5remove peaches from oven and drop spoonfuls of topping over them. spinkle entire cobbler with sugar cinnamon mixture.

Step 6bake until topping is golden brown, about 30 minutes.
