This recipe has the texture of a souffle but pieces will hold their shape when cut and served with a pie spatula.

I like to serve this with whipped cream and why not a scoop of ice cream instead of whipped cream?!

    cooking apples
  • 2 Tbsp
  • 1/2 c
  • 4 large
  • 2 Tbsp
    fresh lemon juice
  • 1 Tbsp
  • 1/2 c
    sour cream
  • 1/4 c
  • ·
    whipped cream, sweetened, powdered sugar, nutmeg

How to Make Sour Cream Apple Puff


  1. preheat oven to 350F ,peel and slice apples
  2. melt butter in skillet, add sugar and apples
  3. cook over medium heat until apples have absorbed most of the liquid and reduced in half
  4. remove half of the apple mixture and set aside
  5. beat yolks in mixing bowl until very thick. beat in sour cream and vanilla
  6. with clean beaters beat whites with 1/4 cup sugar until stiff
  7. fold whites into yolk mixture
  8. spread this over apples in skillet. Top with remaining set aside apples
  9. Bake until puffed and golden about 25 minutes
  10. place pan on cooling rack and sprinkle with powdered sugar and a bit of nutmeg
  11. Cut into 6 to 8 pie shaped pieces and serve immediately.
    Puff will deflate which is normal.
