sour cream apple puff
This recipe has the texture of a souffle but pieces will hold their shape when cut and served with a pie spatula. I like to serve this with whipped cream and why not a scoop of ice cream instead of whipped cream?!

Ingredients
- 4 - cooking apples
- 2 tablespoons butter
- 1/2 cup sugar
- 4 large eggs,separated
- 2 tablespoons fresh lemon juice
- 1 tablespoon vanilla
- 1/2 cup sour cream
- 1/4 cup sugar
- - whipped cream, sweetened, powdered sugar, nutmeg
How To Make sour cream apple puff

Step 1preheat oven to 350F ,peel and slice apples

Step 2melt butter in skillet, add sugar and apples

Step 3cook over medium heat until apples have absorbed most of the liquid and reduced in half

Step 4remove half of the apple mixture and set aside

Step 5beat yolks in mixing bowl until very thick. beat in sour cream and vanilla
-
Step 6with clean beaters beat whites with 1/4 cup sugar until stiff
-
Step 7fold whites into yolk mixture

Step 8spread this over apples in skillet. Top with remaining set aside apples
-
Step 9Bake until puffed and golden about 25 minutes

Step 10place pan on cooling rack and sprinkle with powdered sugar and a bit of nutmeg

Step 11Cut into 6 to 8 pie shaped pieces and serve immediately. Puff will deflate which is normal.
