sour cream apple puff

This recipe has the texture of a souffle but pieces will hold their shape when cut and served with a pie spatula. I like to serve this with whipped cream and why not a scoop of ice cream instead of whipped cream?!

Ingredients

  • 4 - cooking apples
  • 2 tablespoons butter
  • 1/2 cup sugar
  • 4 large eggs,separated
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vanilla
  • 1/2 cup sour cream
  • 1/4 cup sugar
  • - whipped cream, sweetened, powdered sugar, nutmeg

How To Make sour cream apple puff

  • Step 1
    preheat oven to 350F ,peel and slice apples
  • Step 2
    melt butter in skillet, add sugar and apples
  • Step 3
    cook over medium heat until apples have absorbed most of the liquid and reduced in half
  • Step 4
    remove half of the apple mixture and set aside
  • Step 5
    beat yolks in mixing bowl until very thick. beat in sour cream and vanilla
  • Step 6
    with clean beaters beat whites with 1/4 cup sugar until stiff
  • Step 7
    fold whites into yolk mixture
  • Step 8
    spread this over apples in skillet. Top with remaining set aside apples
  • Step 9
    Bake until puffed and golden about 25 minutes
  • Step 10
    place pan on cooling rack and sprinkle with powdered sugar and a bit of nutmeg
  • Step 11
    Cut into 6 to 8 pie shaped pieces and serve immediately. Puff will deflate which is normal.
