seattle blueberry shortcake

I love blueberries, so wanted to share this recipe. You can serve this with whipped cream or over plain yogurt to cut calories. However, we all know that serving it with vanilla ice cream is the best!

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup butter or margarine
  • 1/2 cup milk
  • 2 - eggs, separated
  • 1 teaspoon grated lemon rind
  • 1 cup fresh or frozen blueberries
  • 3 - to 4 tablespoons granulated sugar
  • - whipped cream or yogurt(optional)

How To Make seattle blueberry shortcake

  • Step 1
    Combine flour, sugar, baking powder, salt, and nutmeg in a large bowl.
  • Step 2
    Cut butter into mixture until resembles coarse meal.
  • Step 3
    Combine milk, egg yolks, and lemon rind in a small bowl. Stir mixture with a fork into dry ingredients until a soft dough forms.
  • Step 4
    Pat half of dough evenly into a greased 9-inch cake pan. Sprinkle with blueberries and 1 T of the sugar. Dot the remaining dough over the blueberries.
  • Step 5
    Brush the surface of the dough with egg white. Sprinkle with the remaining sugar (3 T).
  • Step 6
    Bake for 25 minutes at 400 degrees until golden brown or tested done. Serve warm with whipped cream or plain yogurt. Sprinkle with additional blueberries if you prefer.
