Ingredients
- PEARS
- 2 1/2 cups water
- 1/2 cup sake
- 1 cup sugar
- 2 star anise
- 1 cinnamon stick
- 1 lime, juiced and zested
- 2 ripe pears, peeled and left whole
- DARK CHOCOLATE SAUCE
- 2/3 cup heavy cream
- 1/4 cup butter
- 3 ounces dark chocolate, roughly chopped
- 1 tablespoon sugar
- 1 lime, zested
How To Make sake poached pears with dark chocolate drizzle

Step 1Put the water, sake, sugar, star anise, cinnamon, lime zest and juice in a deep pan. Simmer for 5 minutes, then add the pears and lower the heat. Simmer for 45 minutes until the pears are softened. Remove from heat and let cool in the liquid.

Step 2To make the dark chocolate sauce, place all the ingredients except the lime zest in a saucepan and warm on the stove until the chocolate has melted and the sauce is glossy. Stir in the lime zest.

Step 3Remove the pears and cut in half. Place one half on each plate and drizzle the sauce over top.
