Ingredients

  • PEARS
  • 2 1/2 cups water
  • 1/2 cup sake
  • 1 cup sugar
  • 2 star anise
  • 1 cinnamon stick
  • 1 lime, juiced and zested
  • 2 ripe pears, peeled and left whole
  • DARK CHOCOLATE SAUCE
  • 2/3 cup heavy cream
  • 1/4 cup butter
  • 3 ounces dark chocolate, roughly chopped
  • 1 tablespoon sugar
  • 1 lime, zested

How To Make sake poached pears with dark chocolate drizzle

  • Step 1
    Put the water, sake, sugar, star anise, cinnamon, lime zest and juice in a deep pan. Simmer for 5 minutes, then add the pears and lower the heat. Simmer for 45 minutes until the pears are softened. Remove from heat and let cool in the liquid.
  • Step 2
    To make the dark chocolate sauce, place all the ingredients except the lime zest in a saucepan and warm on the stove until the chocolate has melted and the sauce is glossy. Stir in the lime zest.
  • Step 3
    Remove the pears and cut in half. Place one half on each plate and drizzle the sauce over top.
