I searched JAP for a Ritz Cracker Dessert, and found two other versions. This one is a bit different. My Mother made this dessert when we were kids, usually for company. Years later, I wanted the recipe and she didn’t know where it was. I searched the internet for years and even contacted ‘Dream Whip’ & ‘Ritz’ – neither one had the recipe in their archives. Eventually, I found her old recipe box. This is one of my favorite desserts.
1Mix crackers and nuts together and set aside. Beat egg whites to med stiffness. Slowly add sugar. Gradually add baking powder and vanilla. Beat until stiff and thick. Add crackers and nuts, fold in. Make sure all is absorbed. Put in a 9” X 13” greased baking pan (use butter). Cook at 250 degrees for 25-30 minutes. Cool.
2Prepare dream whip as directed on the package. Add cream cheese & mix until blended. Fold in pineapple & frost crust.
