Ingredients

  • BASIC CAKE:

  • 1/2 c
    butter or oleo
  • 1/4 tsp
    butter flavoring (optional)
  • 1 1/2 c
    sugar
  • 2
    eggs, well beaten
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    almond flavoring
  • 3 c
    flour
  • 4 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 c
    milk
  • RHUBARB MIX:

  • 6 c
    chopped rhubarb
  • 1 pkg
    strawberry jell-o, dry
  • 1/2 c
    sugar

How to Make Rhubarb Fruit Delight

Step-by-Step

  1. Cream together butter, flavorings, and sugar. Beat in eggs and vanilla. Add dry ingredients alternately with the milk. Mix well. Place in greased 9x13 pan. This will be a thick batter. Now mix together rhubarb, jello and sugar. Combine and spread over the cake batter. Press into the batter. Bake at 350 degree oven for 40-45 minutes until top is golden brown and center is set. This is great with ice cream or whipped cream.
