Ingredients

  • 1 1/2 c
    all purpose flour
  • 1/2 c
    powdered sugar
  • 1/2 c
    plus 2 t. cold butter or margarine
  • 1 1/4 c
    granulated sugar
  • 2 large
    eggs
  • 2 1/2 c
    finely chopped rhubarb
  • 1/2 c
    chopped walnuts
  • 1/2 c
    flaked coconut

How to Make Rhubarb Dream Bars

Step-by-Step

  1. Combine 1 cup of the flour and the powdered sugar in a bowl. Cut in the butter until like peas.
    Press into a 9x13-inch baking pan.
    Bake in 350^ oven for 12-15 minutes, or just until lightly browned.
    Combine the rest of the flour,and sugar in another bowl. Add eggs,; mix well then stir in rhubarb, nuts and coconut; pour onto crust.
    Bake for 30 minutes or until set , maybe 5 minutes more. Cool on rack.
    Cut into bars.
