This is a 3 layered dessert, kind of piddly, but well worth the time and effort.This is always the first recipe I make with fresh rhubarb. My family loves it!

Ingredients
- FIRST LAYER
- 1/2 pound butter
- 2 cups flour
- 2 tablespoons sugar
- SECOND LAYER
- 5 cups rhubarb
- 6 - egg yolks, reserve whites
- 2 cups sugar
- 4 tablespoons flour
- 1/4 teaspoon salt
- 1 cup evaporated milk
- THIRD LAYER
- 6 - egg whites
- 12 tablespoons sugar
- 2 teaspoons vanilla
- 1 pinch salt
How To Make rhubarb dessert

Step 1First layer, crumble together and press in bottom of 9 x 13 cake pan. Bake @ 350* for 10 minutes.

Step 2Second layer, Mix together and pour on top of baked crust. Bake @ 350* for 40-45 min, or until firm.

Step 3Third layer, beat whites real well, slowly add sugar, 2 TBSP. at a time. Add vanilla and salt. Beat until stiff peaks form. Put this meringue on top of baked custard filling, sprinkle with coconut or chopped walnuts(optional). Bake until golden brown, 350* for 10 - 15 min.
