This is a 3 layered dessert, kind of piddly, but well worth the time and effort.This is always the first recipe I make with fresh rhubarb. My family loves it!

Ingredients For rhubarb dessert

  • FIRST LAYER
  • 1/2 lb
    butter
  • 2 c
    flour
  • 2 Tbsp
    sugar
  • SECOND LAYER
  • 5 c
    rhubarb
  • 6
    egg yolks, reserve whites
  • 2 c
    sugar
  • 4 Tbsp
    flour
  • 1/4 tsp
    salt
  • 1 c
    evaporated milk
  • THIRD LAYER
  • 6
    egg whites
  • 12 Tbsp
    sugar
  • 2 tsp
    vanilla
  • 1 pinch
    salt

How To Make rhubarb dessert

    First layer, crumble together and press in bottom of 9 x 13 cake pan. Bake @ 350* for 10 minutes.

    Second layer, Mix together and pour on top of baked crust. Bake @ 350* for 40-45 min, or until firm.

    Third layer, beat whites real well, slowly add sugar, 2 TBSP. at a time. Add vanilla and salt. Beat until stiff peaks form. Put this meringue on top of baked custard filling, sprinkle with coconut or chopped walnuts(optional). Bake until golden brown, 350* for 10 - 15 min.
