~ rhubarb crunch ~
A delicious Rhubarb dessert that goes great with ice cream, whipped cream or alone. This recipe was one of my Grams that I tweaked to my liking. ENJOY

Ingredients
- CRUMBLE
- 1 cup quick cooking oats
- 1/2 cup flour
- 1 cup brown sugar, firmly packed
- 1/2 cup butter
- RHUBARB MIX
- 3 cups rhubarb, chopped into 3/4 - 1 inch pieces - i cut stalks into and then chop
- 1 - heaping tablespoon flour
- 1 teaspoon ground cinnamon
- 1/2 cup sugar
- 1/8 teaspoon salt
- 1 tablespoon water
How To Make ~ rhubarb crunch ~

Step 1Preheat oven to 350 degree F. Have an 11 x 7 baking dish sprayer with non stick cooking spray. Combine oats, brown sugar and flour, cut in the butter. ( I do this in my food processor. ) Press half of the crumbs, evenly into bottom of dish.

Step 2In a bowl, combine rhubarb, flour, cinnamon, salt, sugar and water.

Step 3Spread rhubarb mixture evenly over crumbs.

Step 4Top with remaining crumbs. Place in oven and bake for 40 - 45 minutes or until rhubarb is tender.

Step 5Serve as is or with whipped cream or ice cream. Enjoy...
