My mother always used fresh rhubarb from the garden to make her rhubarb crunch. I would eat this dish for breakfast or as a dessert; either way it was always a mouth-watering delight!

Ingredients

  • 6 cups diced rhubarb
  • 1 cup white sugar
  • 3 tablespoons all-purpose flour
  • 1 cup packed light brown sugar
  • 1 cup quick cooking oats
  • 1 1/2 cups all-purpose flour
  • 1 cup butter

How To Make rhubarb crunch

  • Step 1
    Preheat oven to 375 degrees. Lightly grease a 9 x 13 inch baking dish.
  • Step 2
    In a large mixing bowl, combine rhubarb, white sugar, and 3 Tbsp flour. Stir well and spread evenly into baking dish. Set aside.
  • Step 3
    In a large mixing bowl, combine brown sugar, oats, and 1 1/2 cups flour. Stir well then cut in butter using a pastry blender until mixture is crumbly. Sprinkle mixture over rhubarb.
  • Step 4
    Bake for 40 minutes. Can be served hot or cold.
