Ingredients

  • 3 cups rhubarb
  • 1 cup sugar
  • 1 teaspoon grated orange rind
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/3 teaspoon baking soda
  • 1/3 cup oatmeal, uncooked
  • 2/3 cup butter
  • 1 cup brown sugar

How To Make rhubarb bars

  • Step 1
    Mix the cut up rhubarb, sugar and orange rind, set aside.
  • Step 2
    Sift together the flour, salt and soda. Add the oatmeal and mix well to blend.
  • Step 3
    Cream the butter and brown sugar and add the oatmeal and flour mixture.
  • Step 4
    Put half the mixture in a greased 11 x 7 pan, put the rhubarb mixture on top.
  • Step 5
    Add the rest of crumbs, press down well so the bars won\'t be too crumbly.
  • Step 6
    Bake at 400 for 35 minutes.
