Just another way of using canned pumpkin. It is so good. It can be made all year round. I make this & others like it about 3 to 4 times a year.

Ingredients

  • 1 c
    all purpose flour
  • 3/4 c
    sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    pumpkin pie spices
  • 1/4 tsp
    salt
  • 1/2 c
    canned pumpkin pie (not pumpkin pie mix)
  • 2 Tbsp
    vegetable oil
  • 1/4 c
    milk
  • 1-1/2 c
    apple cider
  • 1 Tbsp
    butter, room temperature
  • 1 c
    brown sugar, lightly packed
  • 2 Tbsp
    cornstarch
  • 1/4 tsp
    pumpkin pie spices

How to Make Pumpkin Pumkpin & Spicy Cider Pudding Cake

Step-by-Step

  1. First pre-heat the oven to 350F. In a medium bowl mix together the first 5 ingredients. Then stir in the next 3 ingredients just until moistened. Then spread in an ungreased square 8x8x2 inch baking dish.
  2. Next in a 1 quart pot bring the apple cider & butter to a boil over medium-high heat.
  3. Then mix the brown sugar, cornstarch & 1/4 Tsp. pumpkin spice in a small bowl. Then sprinkle over the pumpkin batter in the baking dish. Then pour the boiling cider all over.
  4. Then bake for about 40to 45 mins or until the top is a golden brown & the edges are bubbly. Let cool for about 15 mins. Best served warm
