Just another way of using canned pumpkin. It is so good. It can be made all year round. I make this & others like it about 3 to 4 times a year.

Ingredients

  • 1 cup all purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon pumpkin pie spices
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin pie (not pumpkin pie mix)
  • 2 tablespoons vegetable oil
  • 1/4 cup milk
  • 1-1/2 cup apple cider
  • 1 tablespoon butter, room temperature
  • 1 cup brown sugar, lightly packed
  • 2 tablespoons cornstarch
  • 1/4 teaspoon pumpkin pie spices

How To Make pumpkin pumkpin & spicy cider pudding cake

  • Step 1
    First pre-heat the oven to 350F. In a medium bowl mix together the first 5 ingredients. Then stir in the next 3 ingredients just until moistened. Then spread in an ungreased square 8x8x2 inch baking dish.
  • Step 2
    Next in a 1 quart pot bring the apple cider & butter to a boil over medium-high heat.
  • Step 3
    Then mix the brown sugar, cornstarch & 1/4 Tsp. pumpkin spice in a small bowl. Then sprinkle over the pumpkin batter in the baking dish. Then pour the boiling cider all over.
  • Step 4
    Then bake for about 40to 45 mins or until the top is a golden brown & the edges are bubbly. Let cool for about 15 mins. Best served warm
