This is a really pretty dessert, especially around Christmas time.

Ingredients

  • 9 firm ripe pears with stems
  • 1 1/2 quarts strained fresh orange juice
  • 1 1/2 cups dry white wine
  • 1 cup granulated sugar
  • 2 sticks cinnamon
  • 1/2 teaspoon fennel seeds
  • 8 ounces white chocolate, finely chopped
  • 1/2 cup milk
  • fresh raspberries
  • fresh mint sprigs

How To Make poached pears with white chocolate and raspberries

  • Step 1
    Peel the pears, leaving the stems intact. Trim the bottoms of the pears so the pears will stand upright.
  • Step 2
    Combine the orange juice and the next 4 ingredients in a large saucepan; bring to a boil. Add the pears, standing them upright; cover, reduce heat and simmer for 12 to 15 minutes or until the pears are tender, basting often with orange juice mixture.
  • Step 3
    Remove from the heat. Drain the pears on paper towels.
  • Step 4
    Combine the chocolate and milk in the top of a double boiler; bring the water to a boil. Reduce heat to low; cook until the chocolate melts, stirring occasionally.
  • Step 5
    Spoon the white chocolate sauce evenly onto 8 dessert plates. Place the pears on the sauce.
  • Step 6
    Sprinkle the raspberries over the sauce. Garnish with mint sprigs, if desired.
