Ingredients For poached pears with white chocolate and raspberries

9firm ripe pears with stems

1 1/2 qtstrained fresh orange juice

1 1/2 cdry white wine

1 cgranulated sugar

2 stickcinnamon

1/2 tspfennel seeds

8 ozwhite chocolate, finely chopped

1/2 cmilk
-
fresh raspberries
-
fresh mint sprigs
How To Make poached pears with white chocolate and raspberries

1Peel the pears, leaving the stems intact. Trim the bottoms of the pears so the pears will stand upright.

2Combine the orange juice and the next 4 ingredients in a large saucepan; bring to a boil. Add the pears, standing them upright; cover, reduce heat and simmer for 12 to 15 minutes or until the pears are tender, basting often with orange juice mixture.

3Remove from the heat. Drain the pears on paper towels.

4Combine the chocolate and milk in the top of a double boiler; bring the water to a boil. Reduce heat to low; cook until the chocolate melts, stirring occasionally.

5Spoon the white chocolate sauce evenly onto 8 dessert plates. Place the pears on the sauce.

6Sprinkle the raspberries over the sauce. Garnish with mint sprigs, if desired.
